Superfood Snack Bars

Looking for an on-the-go snack that could work as a pre-workout boost, post-workout recovery, or just a sweet treat?  Look no further.  Superfood Snack Bars!!



Ingredients:
2 cups oats (traditional or old fashion quick-cooking)
1/2 cup chopped nuts (walnuts or pecans)
1/2 cup dried fruit (raisins or cranberries)
1 cup unsweetened almond milk
1/2 cup all natural smooth peanut butter
4 scoops chocolate or vegan chocolate shakeology
Nonstick cooking spray

Directions:
1.  Combine oats, nuts, dried fruit, and shakeology in large bowl.
2.  Add almond milk and peanut butter.
3.  Mix thoroughly, kneading with hands.
4.  Lightly coat 8x8 pan (or similar size pan) with nonstick cooking spray.
5.  Place mixture in pan and press down to flatten to make as even as possible.
6.  Refrigerate for at least 3 hours.
7.  Cut into 12 bars.
