I'm Half the Size I Used to Be

I was at my parents' house for Christmas last weekend and went through some old clothes in my room. I found the pair of workout pants I wore when I started this health/fitness journey.  I have been saving them as a reminder of where I never want to be again.  I pulled them off the hanger and I wondered how big they would be.

I slipped them on and could not pull the drawstring tight enough to keep them up.  Obviously I go the point, they were huge.  Then it occurred to me that I was half my size in dress sizes - formerly a larger 24, currently a small 12.  And I wondered if I could fit in just one leg.  So I held on to the counter as I step my left foot out of the left leg and into the right leg and pulled the pants up again.  Here you go:




There I stood, in just ONE LEG of those pants, literally half the size I used to be!! My one regret?? Not starting sooner!!

2015: The Adventure

Who's making new years resolutions?!  My guess is most people ... it's that time of the year again.

In the past I have made lots of little resolutions.  This year, I am making one BIG resolution.

In 2015, I will do at least one new thing EVERY SINGLE DAY.

It's gonna be awesome!!  How are you going to make 2015 your best year yet?!

T'was the Night I Saved Santa


'Twas the Night I Saved Santa

'Twas the night before Christmas, when all through the house
not a creature was stirring, not even an E&E drinking mouse.
The shakercups were placed on the mantle with care,
in hopes that St. Nicholas soon would be there.

The children were nestled all snug in their beds,
while Shaun T and Chalene danced in their heads,
With vegan chocolate shakeology instead of a nightcap
I had just settled down with a PD book in my lap.

When out on the roof there arose such a clatter,
I sprang from my chair to see what was the matter.
Away to the window I flew like a cardio master,
I checked my time, could have gotten there faster.

The moon on the water of the shimmering bay
Illuminated the yard as if it were day,
when, what to my wondering eyes should appear,
but a miniature sleigh and eight tiny reindeer.

With a little old driver, less lively and quick,
I knew in a moment it must be St. Nick.
More rapid than Tony Horton, his coursers they came,
and he whistled and shouted and called them by name:

"Now Burpee! Now Push-up!
Now, Planker and Squat!
On, Jumper! On, Rower!
On, Toner and Taut!
To the top of the pyramid!
To the top of the wall!
Now max out! Max out!
Max out yourselves all!" 

As dry leaves that before the wild turbofire fly,
when they meet with an obstacle, mount to the sky
so up to the house-top the coursers they flew,
with the sleigh full of boxes, and St. Nicholas too.

And then, in a twinkling, I heard on the roof
the lunging and squatting of each pair of hoofs.
As I drew in my head and was russian twisting around,
down the chimney St. Nicholas came with a few extra pounds. 


He was dressed all in tight duds, from his head to his toe,
With his clothes nearly splitting and confidence low .
A bundle of toys he had flung on his back,
and he looked like a peddler without a six pack.

His eyes didn't twinkle! His dimples, were saddened!
He had been eating those cookies that were too sugar ladden!
His droll little mouth was drawn up in a frown,
and just looking at him you could tell he was down.
The stump of a candy cane he had eaten so fast,
Stuck out of his mouth as he beckoned a sugar crash.
He had a broad face and a little round belly,
that shook when he moved, like a bowl full of jelly.

He was chubby and plump, not his jolly old self,
and I frowned when I saw him, in spite of myself.
A wink of my eye and a twist of my head
soon gave him to know he had nothing to dread.

I spoke not a word, but went straight to my work,
and filled all the blender, then turned it on with a jerk.
After pouring the nutrient dense shake into a cup
I handed it to him and told him "drink up!"

He drank up the shakeology and then sprang to his sleigh,
He whistled to his team and they all flew away
But I heard him exclaim, 'ere he drove out of sight,

"Healthy Christmas to all, and to all a good night!"

Healthy Comfort Food?! Count me in!

A few weeks ago I was in need of some comfort food big time, but I did not want a meal (or a whole week of meals) to throw me off track and sabotage all my hard work.  I went in search of some healthy comfort food, and let me tell you, it is not so easy to find.  I found a fairly clean recipe and made some healthy modifications!  :)

Here you have it, my healthy but comforting Turkey Pasta Bake!

Ingredients:

2 lbs ground turkey
4 c elbow pasta (cooked)
1 c shredded zucchini 
1/2 c diced green pepper
1/2 c diced onion
1T minced garlic
2 c tomato/spaghetti sauce
3/4 c shredded cheese
1/3c cottage cheese
2/3 c greek yogurt
1/4 cup Parmesan cheese
Spices: garlic salt/powder, salt, pepper

Directions:

1. Brown the ground turkey and set aside.  




2. Cook the pasta (I used the Dream Field elbow noodles) and measure out 4 cups of cooked pasta; set aside.




3. Dice the peppers and onions.  Put peppers, onions, and garlic in fry pan with minimal amount of olive oil.  Sprinkle with salt and pepper.  Saute over medium heat until onions are translucent. 



4. Shred the zucchini and put aside. 




5.  While you are cooking everything else (haha) put your cottage cheese, greek yogurt, and parmesan cheese into a food processor or blender with a little garlic powder (just shake some in!).  Blend until smooth.




6.  In a big bowl mix the cottage cheese/greek yogurt/ parmesean cheese mixture with the noodles you already cooked.



7.  Then in a big frying pan or pot, mix the cooked ground turkey, and cooked peppers/onions.  Add the 2 c tomato sauce (I used Classico Roasted Garlic) and the shredded zucchini.  Let this simmer for 10-15 minutes.  Add garlic powder, salt, and pepper to taste.




8.  Grab a 9x13 glass baking dish.  Spread a layer of the noodle mixture on the bottom, using half the mixture.  Then spread a layer of the meat mixture, using half the mixture.  You should make 2 layers (noodle, meat, noodle, meat) and use the full mixture.  





9.  When your layers are complete, sprinkle the top with shredded cheese.  Then put in the oven at 350* for about 20 minutes (or until the cheese is nicely melted).




10.  Remove and let cool, then divide into 4 servings!  Yep, it's a lot of food!!  

11.  EAT IT!!  Or freeze some of it for eating later. 

For you 21 Day Fixers, a serving (1/4 of the pan) is 2 red, 2 yellow, 1 green, and 1 blue!

Chicken Taco Soup

Now that the days are getting colder, I am wanting something comforting and warm.  But I don't have the time to slave over the stove.  Enter CROCKPOT!!  I found and altered this amazing recipe for Chicken Taco Soup.  So so yummy!!  Healthy for you and guaranteed to be husband approved!!




Ingredients:

3 - 8oz Chicken breasts (frozen or fresh)
1 can Kidney Beans
1 can Black Beans
1 can Corn
2 cans Rotel
8-10 oz chicken or vegetable broth
1c tomato sauce (I use Classico Roasted Garlic)
1/2c diced onions (optional)
1 packet taco seasoning (or 21DF Southwest seasoning mix)

Directions:

Place chicken breasts in crockpot first.  Then put in all other ingredients on top.  Turn the crock pot on high for 4-5 hours or low for 8-10 hours.  Walk away for the designated time, then come back and serve.  Top with cheese or Greek yogurt!




For those of you following 21 Day Fix, here are the rough breakdowns:

Chicken = 4 red
Beans = 6 yellow
Corn = 2 yellow
Rotel = 2 1/2 green
Tomato Sauce = 1 green
Onions = 1/2 green

Split the crockpot into 4 servings (yep, it is a lot of food!).  Each serving will be 1 red, 2 yellow, 1 green.

100 ... ONE HUNDRED ... 100

I have written this post a million times in my head and yet now there are no words, or at least not the right noes.  Today, November 13, 2014, I achieved one of my biggest and most coveted health and fitness goals.  I have finally lost over 100lbs ... 104.1 to be exact.

When I stepped on the scale this morning I read it as 189.3 and truthfully was disappointed, I had gone up.  Then it occurred to me ... that is not what the scale had read.  I quickly stepped back on and stared at the number 183.9.




This has been a LONG time coming and the journey has not been without it's ups and downs.  What amazes me most is that today ended up, of course being a day of celebration, but more so being one of reflection.  I wanted to share my thoughts in a little more personal way than just words on a page, so here you go ... this is me, no script, no makeup, just me, 100lbs lighter and so much healthier!!




 By the way ... I found it difficult myself to understand exactly what 100lbs looks like, so here are some photos to put it in perspective:

Adventures in Eggplant

So I was feeling a little adventurous when I was shopping this weekend and decided to pick up an eggplant.  The beautiful purple color was just calling to me and I had been playing with the idea of eggplant pizzas for quite some time.  

Eggplant pizza is exactly what I made and it was delicious!!



Ingredients: 
1 globe eggplant, about 8 ounces and 9-10 inches long
about 1 T salt, for drawing water out of eggplant
olive oil spray, for coating the baking sheet and eggplant slices before roasting
about 2 tsp. dried Italian seasoning, for sprinkling on eggplant before roasting
garlic salt, re pepper flakes, and paprika for sprinkling on eggplant before roasting
shredded cheese of your favorite variety
pizza/tomato sauce of your choosing (can use meat sauce below)

Meat Sauce Ingredients:
2-3 tsp. extra-virgin olive oil
3 large garlic cloves, very finely chopped
1lb ground turkey
1 jar Classico Roasted Garlic tomato sauce
salt/pepper to taste

Directions:
Cut off both ends of the eggplant; then cut it into 3/4 inch thick slices (aim for the same thickness!)  Put the eggplant pieces on a double layer of paper towels and sprinkle both sides generously with salt.  Let the eggplant sit with the salt on it for about 30 minutes to draw out the liquid.  After the eggplant sits for 15 minutes, turn on the oven to 375F.



While the eggplant sits, make the meat sauce or heat the sauce of your choosing.  Heat 2-3 tsp. olive oil (depending on your pan) and brown the meat, adding the chopped garlic partway through the coking process.  Add the tomato sauce and let the sauce cook at a low simmer until it's thickened.  

After 30 minutes, wipe the eggplant dry with paper towels (this also removes most of the salt; press pretty firmly to remove as much moisture as possible)  Spray a roasting sheet with olive oil or non-stick spray, lay eggplant slices on and spray with olive oil, and sprinkle with seasoning.  Roast the eggplant about 25 minutes. 

After 25 minutes or when eggplant pieces are done, remove eggplant from the oven and turn oven setting to broil.  Spread a few tablespoons of sauce on the top of each eggplant slice and top with a generous amount of cheese.  Put pizzas under the broiler until the cheese is melted and slightly browned (probably only a few minutes). 



 Serve hot, and enjoy!

Happiest Halloween

I used to say that the Happiest Halloween was the one that didn't happen.  But in 2012, that tune changed.  The Happiest Halloween was one that was over shadowed by Giants World Series Parade Day!!

As luck would have it, those superhero Giants did it again ... they saved me from Halloween 2014.

So Happy Giants World Series Parade Day to all of you out there!!  Here is the traditional costume:




Sidenote: I bought that t-shirt after the Giants won the world series in 2012.  It did not fit at the time I bought it so I have been waiting 2 years to wear this!!  :)  LOVE OCTOBER


Hot for Halloween

During the month of October 2014 I completed a program that focused not on eliminating foods but on controlling portions. Even wine and chocolate were included! It incorporated basic exercises that could be modified to be easier or more difficult through the elimination or addition of weights and the workouts are only 30 minutes!

I lost just under 5lbs and just over 7 inches. While the numbers are not shocking, check out the changes in my body in the photos below! 


NOTE: This also happens to be the program that I FINALLY broke 100lbs lost with!!

Quinoa Taco Bake

I am a REALLY picky eater, like, rival a 5 year old picky eater.  But I have really been trying to incorporate more veggies and new foods into my life.  I started a program called the 21 Day Fix about 3 weeks ago and a was looking for recipes to use.  I came across something that looked "pretty good" though I wasn't too sure about all the veggies ...  Turned out to be amazing!!  It is a Taco Quinoa Bake!  Simple to prepare and delicious to enjoy!!
Ingredients: 
1lb Lean Ground Turkey 93/7 – 4 RED containers*
1 cup uncooked Quinoa – 4 YELLOW containers*
1 14oz can Rotel
4-5oz of Tomato Sauce 
1-2 Large Zucchini Squash (shredded) – 2 GREEN Containers*
Shredded Mexican Mix cheese – 4 BLUE Containers*
2-3 TBSP Chili Powder
2-3 Tsp Cumin
3 Garlic Cloves minced
Cilantro chopped fresh - as much as you like!
*For measurement conversions, check the bottom of this post!
Directions: 
1. Preheat oven to 350 degrees. Lightly spray 9×13 glass baking dish with olive oil and set aside.
2. Prepare quinoa as directed. Fluff and measure out 4 YELLOW containers. Should be most all of it.


3. While quinoa is cooking, spray skillet and place on med-high heat. Add garlic and ground turkey. Break up meat and add your Chili Powder and Cumin as it browns. Before all the way cooked through, add your can of Rotel (w/ juice). Adjust seasonings to taste. 


3. Add 2 green containers of shredded zucchini squash to your meat mixture. Allow to simmer until the veggies are tender.
4. Remove from heat and add your quinoa- 4 yellow containers, 1/2 green container of tomato sauce, and 1 blue container of shredded cheese. Mix together.


5. Pour mixture into prepared baking dish. Top with cilantro and remaining 3 (blue) containers of Cheese.


6. Bake uncovered 10-15 mins until cheese is melted.


7. Divide into 4 equal portions.
8. Enjoy!

Free From Fitness 19

Many of you who have followed my blog for quite some time know that I joined Fitness 19 about 3.5 years ago and it is where I began my health and fitness journey.  I joined the San Mateo branch and trained with an exceptional trainer and later trained with 2 other great trainers who I continued to train with even after I moved 400 miles away (when I was in town).

I trained at the San Mateo club, religiously, twice a week (sometimes more) for 18 months.  I easily spent over $5,000 at that club on membership fees and training.  And even though it was expensive I willingly did so because I was treated as more that just a dollar sign, by both the managers and the trainers.

In November of 2012, I accepted a job offer that took me 400 miles away from the San Mateo Fitness 19, but was thrilled to learn there was a Fitness 19 less than a mile from my new office, in Orange.  Before I even left San Mateo, I converted my single gym membership to an all gym membership.  Within days of arriving in Orange County, I stepped into the Orange club.

I wanted to keep up my progress in health/fitness, so I immediately sought out a trainer.  There were 2 to choose from and based on their schedules I signed up with a trainer named Ricky.  I bought a large sum of sessions, and scheduled to train 2 days a week, which I quickly increased to 3 days a week with hopes of getting better results.

As expected, the first couple of sessions were focused on what I could do, what weights were appropriate, what muscles were stronger, what needed work, etc.  But then the workouts did not change or progress, they were repetitive, and frankly, boring.  I had trained with my former trainer roughly 1700 sessions and never once had the same session!! I asked Ricky to change things up, he would change things for a session and then go back to his normal routine.  Most times when I wanted to do something different, I had to come up with it.  This was not ideal, but I could live with it; after 1700 training sessions, I knew a lot of exercises to incorporate.

During this time, the manager changed (although most people would never know since both the former manager and the current manager were named Brian).  The club definitely took a turn after the management change.  Once clean machines had a layer of dust, dumbells were never re-racked, the cupholders were full of flyers and trash, and frankly, the place began to smell like a gym.

Then Ricky became very flaky, cancelling one of my three-time-a-week training sessions almost every other week and ALWAYS at the last minute.  He would text me excuse after excuse: my mom needs my help, I am not feeling well, I have a headache, I need to take my car in, etc. Eventually I dropped my sessions down to two a week, thinking that would eliminated the cancellations – it did not.  So I dropped down to once and started training myself.  Training myself was much more effective and the results I wanted finally started to come (without any other changes).  But I had bought a bunch of sessions and I did not want to waste all that money, so I kept training, just trying to use them up.

I had given Ricky my original training documents (from my trainer in the bay area) when I first started so that he could get up to speed on my limits faster.  After I began training myself, I asked for them to be returned so that I could use them.  I requested their return on multiple occasions by text, email, phone call and was always told I would get them the next session, which never happened.  Finally I requested them in person in front of his manager.  He told me they would be returned on his schedule and that I would have to wait for them until it was convenient for him.  Nice huh?  (I did not get these back until I stopped training with Ricky, even after additional requests and talking to the manager).

The final straw with Ricky was when I had back-to-back cancellations.  The last time, I was already parked in the parking lot ready to walk in and he texted me telling me he was “too tired” for our training session.  I am not a trainer, I have never been certified, taken training classes etc.  But I know that part of a trainer's job is to keep you motivated to come back and train with them.  If the trainer is constantly making excuses, especially as ridiculous as "I'm too tired", what does that say to the client??

If I told one of my clients I was too tired to keep their appointment, not only would I be fired, I would likely be sued for malpractice.  I previously thought I could work these issues out with Ricky as we were both adults, but clearly my requests for advance notice and fewer cancellations fell upon deaf ears. I finally brought all these issues to the manager’s attention in June of this year.  I wanted to cancel my “all gym” membership and have my sessions reimbursed or transferred to the San Mateo gym.

My request for either of those was denied and I was left with the following options:
     (1)   A 1 year membership for someone of my choosing (worth roughly $163)
     (2)   Transfer half my sessions to another member (no reimbursement to me)
     (3)   Be assigned a new trainer

Number one was clearly not an option for two reasons: (1) I (really someone else) would be receiving something valued at $163 when I had paid $300 for my training sessions and (2) why would I ever recommend someone to a gym I was trying to leave??

Number two also basically meant a loss of $300, with no compensation.

Number three was the only viable option since all other requests were refused.  I was also threatened by the manager that my sessions would expire so I should take this deal and extend them otherwise I would lose the money anyway.  While I am familiar with the contract advising that the sessions expire a year from purchase that had not been the course of performance at the San Mateo club, where the manager allowed me at all times to use my sessions bought in 2012, and still did until I decided to cancel my account at which time he allowed me to transfer them to another member who would pay me directly.  So being threatened with the expiration of the sessions was new to me, and since I was not the one continually cancelling scheduled sessions, the trainer was, this quite frustrating.

During the "negotiation" regarding the training sessions, I dealt with the club manager, Brian. I was CONSTANTLY put off.  He took days (10 days one time) to return my phone calls despite multiple messages being left with multiple people.  At one point, I called multiple times within a 2-3 hour period and was promised a call “as soon as he was done” with a client and then was told he had to take another client before me and then another.  It was clear he did not want to deal with me.

Begrudgingly, I accepted the new trainer to avoid losing my fairly hefty investment.  Again there were only 2 trainers available and only one of them worked evenings, so I was set up with Daniel.  I was originally told that he was available on Friday evenings, at that time my only open evening for training.  This was not the case.  So I had re-arranged my schedule to finish off my training sessions on Wednesday evenings.

I scheduled my first session with Daniel, and 3-4 hours before my very first session with him, he texted me that he was just getting over a cold and we should reschedule.  To his credit when I refused to reschedule, he did show up.  I completed several sessions with Daniel, who I actually was satisfied training with, mostly because he did not flake, a fairly low bar.

On 10/16/14 I received a text from Daniel advising me that he was considering taking an Assistant Manager position at the Orange Club.  I asked him if he would be able to finish off my SINGLE remaining session.  He advised “I can prob try to set some time aside to do it but I’ll have to let you know.”  I did not hear from him after that.

Then on 10/20/14, I got a call from another trainer, who apparently was taking over Daniel’s clients. He wanted to schedule a session.  I texted Daniel and he confirmed that he took the position and would no longer be training, not even to finish my last session.  He said that he would have tried to “kill it” but knew I was not available.  However, he never texted or called to ask me when I might be available to finish off the session.

So, with a SINGLE remaining session, I was transferred to yet another trainer.  A trainer I had never seen, met, or talked to.  I asked Daniel to have the manager call me.  I did not receive a call that day from the manager, so the following morning, I called the club and left a message with another staff member for him to call me.  I also called the new trainer and asked him to have the manager call me.

I knew however, from my previous dealings, that the gym would never refund my training sessions, even just one.  And I did not want to go through days or even weeks of phone calls to just have to settle for a third trainer anyway.  So I called the newest trainer back and scheduled the session. Only after I scheduled the session with the third trainer did I get a return phone call from the manager.

I wrote a letter very similar to this account to the club's owner, but I am not holding my breath that things will change.  Realistically, I should have just eaten my $300 and not bothered with the headaches.  But, I'm stubborn and do not like to waste money.  Plus, I am sure this is what they bet on people doing.

I completed my last session and I faxed, mailed, and personally delivered my cancellation papers. My subpar experience at the Orange club unfortunately eclipsed the experience I had at the San Mateo club.



I do have to say, that I have learned a lot from this experience.  A lot about people, and a lot about myself.  So much actually that I need another post .. this one is already quite long.

The Club 33 Experience

If you are a Disney fan, like myself, you are likely aware of the exclusive Club 33.  It is a members-only club inside of Disneyland.  It is housed in the upstairs rooms of the buildings in New Orleans square and overlooks the Rivers of America. And it was just completely refurbished this July.  It is comprised of 2 sections, a dining room and lounge.  Members can make reservations for themselves and their guests in the dining room, but only card carrying members are allowed in the lounge, as my mom and I found out.

My wonderful friend from law school got us a reservation for 11:40 on Saturday 10/18/14 and an Alpha Kappa Psi brother of mine from college signed us into the park.  I MUST thank these 2 friends who made the Club 33 experience possible.  You have no idea how much it meant to us!!

My mom and I arrived at the door and rang the doorbell about 15 minutes before our reservation.




We were ushered into the Court of Roses where we were offered water and a towel to wash our hands.  We looked around the courtyard while waiting for our hostess.  There were fountains and lights, all so whimsical.




We were then lead up the grand staircase to the lobby of the club.




A tile Mosaic marked the entrance.




The lobby was gorgeous complete with a glowing chandelier.




We were seated at our table near the bar.




We perused the drink menu and the lunch menu.  I ordered a humming bird; my mom got coffee.




We ordered different appetizers and salads to try each others.  And we both ordered the filet.  Of course we had dessert!!









After our fantastic lunch we went out on the balcony to sit for a bit and take some more photos.  Then we wandered into the lounge (that we did not know was for members only!!).  We topped the trip off with a couple of purchases, a trip to the luxurious bathroom, and a last parting glance  behind us as we exited.

It was a truly magical experience, and another item to cross off the bucket list!!
