Crockpot Chicken Fajitas

The crockpot is one of my favorite (and most frequently used) kitchen gadgets.  It makes cooking meals a breeze and everything turns out perfect nearly 100% of the time!!

These Crockpot Chicken Fajitas are sure to please everyone in your family!



MAIN INGREDIENTS:
2 medium-large red bell peppers
2 medium-large yellow or orange bell peppers
1 medium green bell pepper (optional)
1 medium onion
1 packet taco or fajita seasoning (or use the spice combo below)
1.5 pound boneless skinless chicken breasts
½ - 1 cup chicken broth
1 cup Pico de Gallo or favorite salsa

Extras:
Tortillas or Tortilla Chips
Sour cream or Greek yogurt
Guacamole or plain avocado
Beans (black or refried)
Spanish rice
Extra salsa
Cheese

Optional Seasoning Mix: (to replace seasoning packet)
1 tbsp Chili Powder
2 tsp ground cumin
1 tsp ground coriander
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp oregano
1/2 tsp paprika
1 tsp sea salt


DIRECTIONS:
1.  Slice bell peppers and onions in ¼ inch slices (or smaller) and place them in the crockpot.
2.  Sprinkle seasoning over bell peppers and onions in Crockpot.



3.  Add chicken breasts and chicken broth.
4.  Cook on low for 6-8 hours, or on high for 3-4 hours.
5.  Remove chicken from the Crockpot and let cool slightly, then shred with a fork.




6.  Add shredded chicken back to Crockpot and mix with peppers and onions.
7.  Add pico de gallo or salsa to the crockpot.
8.  Let cook another 30 mins so the flavors combine.
9.  Serve over tortillas or tortilla chips with your choice of toppings
10.  ENJOY!!
