Crockpot Chicken Fajitas

The crockpot is one of my favorite (and most frequently used) kitchen gadgets.  It makes cooking meals a breeze and everything turns out perfect nearly 100% of the time!!

These Crockpot Chicken Fajitas are sure to please everyone in your family!



MAIN INGREDIENTS:
2 medium-large red bell peppers
2 medium-large yellow or orange bell peppers
1 medium green bell pepper (optional)
1 medium onion
1 packet taco or fajita seasoning (or use the spice combo below)
1.5 pound boneless skinless chicken breasts
½ - 1 cup chicken broth
1 cup Pico de Gallo or favorite salsa

Extras:
Tortillas or Tortilla Chips
Sour cream or Greek yogurt
Guacamole or plain avocado
Beans (black or refried)
Spanish rice
Extra salsa
Cheese

Optional Seasoning Mix: (to replace seasoning packet)
1 tbsp Chili Powder
2 tsp ground cumin
1 tsp ground coriander
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp oregano
1/2 tsp paprika
1 tsp sea salt


DIRECTIONS:
1.  Slice bell peppers and onions in ¼ inch slices (or smaller) and place them in the crockpot.
2.  Sprinkle seasoning over bell peppers and onions in Crockpot.



3.  Add chicken breasts and chicken broth.
4.  Cook on low for 6-8 hours, or on high for 3-4 hours.
5.  Remove chicken from the Crockpot and let cool slightly, then shred with a fork.




6.  Add shredded chicken back to Crockpot and mix with peppers and onions.
7.  Add pico de gallo or salsa to the crockpot.
8.  Let cook another 30 mins so the flavors combine.
9.  Serve over tortillas or tortilla chips with your choice of toppings
10.  ENJOY!!

The Grand Canyon: So Much More Than "Grand"

Have you ever been some where absolutely magical?  Like completely and utterly breathtaking?  To the point where you think it is just not real?  The Grand Canyon was like that for me!

Several months go, when were planning our trip to spring training, my friend and I decided to turn the trip into a road trip and add a detour to the Grand Canyon - somewhere we have both wanted to go for a LONG time.  The months flew by and before we knew it, we were there ...

We arrive at the Grand Canyon National Park around noon.  We checked into the lodge, but our room was not ready.  We could not wait to see the Grand Canyon, so we took a sneak peak before we grabbed some lunch.  As we approached the edge, both of us took sharp inhales at the sheer vastness of it.  Pictures just do not compare.  

Our first view of it was something like this:





Starving, we pulled ourselves away from the stunning view to grab lunch.  Then we drove out to the far parking lot, and started our several mile walk around the rim of the Canyon.  We started at Mather's Point, and walked several miles around the southern rim.  There are just no words to describe the beauty, and the pictures don't even begin to actually show the depth.






After our walk, we hopped on one of the shuttles and took it out to one of the recommended points for watching the sunset.  Though the colors were no spectacular, the sunset was beautiful, crisp, and clean.  As I watched the sun sink below the horizon, and shroud the canyon in darkness, I thought about all of the major things I want to do this year - build my coaching business, be published, and fall in love again.  I sent a couple little suggestions out to the universe that I want these things, and in that quiet space between light and dark, I know the universe was listening.



The next morning we left this beautiful, magical place, but not before we took a few more photos (in Giants gear as we were headed to spring training!!

Do you even RUN?

Completed the Scottsdale Giant Race this weekend!!  Well it was more like doing the Scottsdale Giant WALK because there was no racing involved at all.  A few friends and I were in Arizona for spring training and decided to do the 3 mile "race" just for fun.





The 3 girls I was doing with are self-proclaimed "not runners" and I was just coming off of being sick, so we stuck to walking, and a leisurely walk at that!  We walked through downtown and finished on the field, collected our medals and snacks and headed back to where we were staying to get ready for the game!  It was a faun little walk, and if you are in Scottsdale on Giant Race weekend, I highly encourage your participation.  :)




I have done the SF Giant Race a couple times now.  I actually run that race and I fund raise for it too.  You can check out my experience in 2013 and 2014.  I'll be doing it again this year in August.  Which reminds me, I should get to fundraising!
