I wanted
to try some new recipes this weekend so I looked some up online and came across
a recipe for BBQ chicken that sounded easy and delicious (always a good
combination). So I went to the store,
picked up the ingredients. I did have to
modify the recipe a little because I wasn’t able to find some things or wanted
to add less of some things.
Here are the ingredients I used:
• 1 8-ounce can reduced-sodium tomato
sauce
• 1 4-ounce can chopped green chiles,
drained
• 3 tablespoons cider vinegar
• 1 tablespoon raw organic honey
• 1 tablespoon sweet or smoked paprika
• 1 tablespoon tomato paste
• 1 tablespoon Worcestershire sauce
• 2 teaspoons dry mustard
• 1/2 teaspoon cayenne pepper
• 1/2 teaspoon salt
• 2 pounds boneless, skinless chicken
breast, trimmed of fat
• 1 small onion, finely chopped
• 1-2 tablespoons garlic, minced
Here are the
directions:
1. Stir tomato sauce, chiles, vinegar, honey, paprika, tomato
paste, Worcestershire sauce, mustard, cayenne and salt in a crockpot until
smooth. Add chicken, onion and garlic; stir to combine.
2. Put the lid on and cook on low until the chicken is fully
cooked – about 2-3 hours on high, longer on low.
3. Transfer the chicken to your kitchen aid bowl with the
paddle attachment. Turn the mixer on and
watch it magically pull your chicken for you!
Then scoop it out and either serve as is, or throw it back into the
sauce if you like it saucier.
I was totally
excited about pulling the chicken with my kitchen aid. That was not in the
original recipe, but a friend told me about it so I decided to try it and wow –
amazing!! Here is what it looked like:
The question really is what are you going to
do with your chicken now?! I made mine
into a delicious salad with romaine lettuce, black beans, corn, Mexican cheese,
greek yogurt, and lemon!! YUM!!
